Christmas in Australia is very different from the rest of the world. We have our own special blend of summer based activities that have become traditions as many of us take a well earned 2 week break over the festive period (stay strong essential workers, we appreciate you!).
This next recipe is absolutely perfect for summer barbecues, hot lazy afternoons or warm evenings. Iced Ruby has a refreshing, slightly tart flavour which lends itself so well to a nice little silky sour. Do yourself a favour and whip up one of these little beauties, you won’t regret it.
Ingredients
1 cup chilled Iced Ruby
60ml vodka
Juice of half a lemon
2 teaspoons maple syrup
1 egg white
OR 2tbsp Aquafaba (vegan)
Mint garnish
Directions
Add the ingredients to a cocktail shaker without ice, and dry shake to thoroughly combine. This step is really important for ensuring a smooth, silky texture.
Next, add ice to your cocktail shaker and shake again vigorously until all the ingredients are super chilled and you have a nice thick white foam.
Strain and pour over 2 short glasses with ice and let settle for 2 minutes while the foam forms on top.
Garnish with mint, then enjoy!
