Iced Ruby Margarita Sorbet

We’re halfway through summer, and thought it was the perfect time to share a few more delicious ways to add the flavour of teas into your life during the warmer months. So far we’ve covered how to cold brew your teas, we’ve learned all about Iced Ruby and iced teas and several iced latte recipes. But we’re not done yet!

Iced Ruby Margarita Sorbet
Oh yes, you read that right…

Margarita Sorbet.

It’s beautiful, luscious and perfect for your next summer dinner party.

All you need to make this delicious dessert is:

1/2 cup sugar
45g Iced Ruby
Zest and juice of 2 limes
2 tablespoons tequila

Instructions

  1. Bring 2 cups water and sugar to a boil in a medium saucepan. Stir until sugar is dissolved. Remove from heat; stir in flowers. Cover, and let steep for 1 hour.
  2. Strain the Iced Ruby syrup, and discard solids. Place in the fridge until completely chilled. When cool, stir in lime juice, lime zest and tequila.
  3. Freeze mixture in an ice cream maker. Transfer to a container and store in the freezer.

Serve with lime slices and no judgements if you wanna add an extra little splash of tequila. We guarantee your guests are going to LOVE this zesty, delicious dessert.
